Vitamin D strengthens our bones and teeth by helping the body to absorb calcium. It has also been shown to play other roles in human health, including modulation of neuromuscular and immune function and the body's natural inflammatory response function. Additionally, new research has shown that there is a link between vitamin D and cardiovascular health, in addition to a link to the immune system.
Vitamin D deficiency can occur with inadequate consumption, limited exposure to sunlight, such as with those living in northern latitudes, failure of the kidneys to convert vitamin D to its active form, or inadequate absorption of vitamin D from the digestive tract. Smog, skin melanin content, cloud cover, and the use of sunscreen are other factors that have been shown to contribute to poor vitamin D absorption.
Our bodies can create vitamin D with adequate amounts of sunlight and many health care professionals are now recommending sun exposure for just 10 to 15 minutes daily without sunscreen. It is thought to be enough exposure to ensure adequate vitamin D yet still be safe, although there's no consensus between physicians concerning how little exposure to the sun raises the risk of skin cancer over time.
Food can be a source of vitamin D, but is generally limited to fish, such as salmon, tuna, and mackerel, fish liver oils, and, on a smaller scale, beef liver, cheese, and egg yolks. With such a small number of foods containing vitamin D, supplementation, taking into consideration each individual's unique needs appears to be the best approach.
